TYPE 2 DIABETES??? Add this common Indian vegetable to lower your sugars

Diabetes is a condition that occurs when the body cannot maintain healthy levels of sugar (glucose) in the blood. Type 2 diabetes develops when the body does not make enough insulin or does not use it well. This type of Diabetes can be easily managed with a healthy diet and physical activity and medication.

Recent studies have shown that a low-carb diet can be extremely beneficial for Type 2 Diabetics in controlling the sugar levels and in some cases even reversing the disease. A low- carb diet is a diet which has absolutely no refined carbohydrates, like added sugar, cakes, soft drinks, maida, biscuits and sugary drinks etc and very little grains(depending on individual blood tolerance). There are a lot of foods that can help in lowering the sugar levels. That being said it should be mentioned here that these are not ‘Miracle Foods’ that can reduce your sugar levels after you have eaten sugary foods! One such vegetable is the humble Bhindi(ladiesfinger/Okra).

Okra/Ladiesfinger/Bhindi

Studies have shown that Ladiesfinger/Okra may benefit diabetics by reducing the rate of glucose being absorbed by the intestine. This may be primarily due to the slimy mucilage that is in the vegetable. It is also high in fiber which is an important component for controlling diabetes symptoms by keeping you full for a longer period thereby reducing hunger cravings. It also contains other nutrients like antioxidants, folate, potassium, calcium and vitamin K. Many people soak a cut ladiesfinger in water overnight and drink the water in the morning along slimy content.

Bhindi is a commonly used vegetable in every Indian household and each family probably has it own favourite bhindi recipes. Here are a few recipes that you can include:

  1. Bhindi in Peanut Masala
  2. Dry Bhindi Sabzi
  3. Palakkad style Bhindi Sambar
  4. Bhindi Fried Rice

Other foods that have been known to lower blood sugars are:

  • Karela(bittergourd),
  • Jamun fruit(Java fruit)

  • Methi seeds (Fenugreek seeds)
  • Cinnamon (Ceylon)

Okra Fried Rice (Ladiesfinger/bhindi Fried Rice )

Okra Fried Rice

  • We first had Okra Fried Rice at a Caribbean inspired party and it was just awesome!Never knew that okra /bhindi could blend so well with rice. The whole dish has a subtle okra flavor and goes well with the jerk chicken (jerk potatoes for the vegetarians) and goat curry.
    I didn’t get the actual recipe, but tried it anyway and the result was almost similar to the original. So go ahead and try out this awesome Caribbean style Okra Fried Rice.

    Ingredients for Okra Fried Rice:

  • Fresh Okra/Ladiesfinger: 250g(finely sliced into thin rings)
  • Onions: 1 small (finely minced)
  • Garlic: 5 cloves(finely chopped)
  • Bell Pepper(optional): 1/2( finely chopped into cubes)
  • Cooked rice: 3 cups(cooled brown or basmati)
  • Bay leaves: 1-2
  • Cloves: 2
  • Cinnamon: 1/2 “
  • Allspice: 1tsp
  • Oil: 1tbsp
  • Soy sauce: 1-2 tsp
  • Pepper: to taste
  • Salt: to taste

    Method:
    1)Heat the oil in a non-stick pan, add the bay leaves, cloves, cinnamon. Then add the chopped onions and garlic and saute till translucent.
    2)Add the bell pepper and saute for 5 mins(optional) and then add the okra rings and fry till it loses the stickiness.
    3)Add the soy sauce,allspice,pepper and salt and saute for a couple of minutes.
    4)Add the cooked rice(you can add some chicken soup base while cooking the rice for added flavor) and mix well.
    5)Serve the Okra Fried Rice with ‘jerk chicken’ or ‘jerk potatoes’, Chicken curry, or any spicy curry.

Dry Bhindi Sabzi (Spiced Okra recipe-Indian Style)

Do your kids turn their nose up at the mention of ladiesfinger/Okra/bhindi? Try out this tasty and easy recipe of dry bhindi sabji (Dry okra recipe) and watch them gobble it all up. This recipe is something I learnt from my friend Rohini’s mom, Meghana Ghatpande. Meghana aunty-thanks a ton for making this one of the kids favorite recipes 🙂
Okra is rich in both soluble and insoluble fibers which may help in lowering cholesterol, aid in digestion and also have folate and vitamin K along with Vitamin A, B&C.
Ladiesfinger Sabzi
Ladiesfinger Sabzi with Phulkas
Ingredients for the dry bhindi sabzi:
  • Okra/ladies finger/bhindi: 250gms
  • Cumin powder: 1tsp
  • Chilly powder: 1/4th tsp (optional)
  • Lemon: a dash
  • Cilantro/Coriander leaves: 1-2tbsp chopped(for garnish)
  • Salt: to taste
  • Oil: 1tbsp

Method:

  1. Wash, pat dry and cut the okra.
  2. Heat the oil in a non-stick pan and add the okra slices.
  3. Stir occasionally till the okra is almost done (the slimy part goes away) .
  4. Add the cumin powder , salt and/or red chilly powder and mix well.
  5. Stir fry till done.
  6. Switch off. Squeeze a dash of lime and garnish with cilantro.
  7. Serve the dry bhindi sabzi as a side with rice and dal or with phulkas.
